Mix the yeast with 3 tablespoons of boiling water and sugar and leave to rise for 5 minutes. Separately mix the rest of the water and oil. In a taller bowl put flour (about 1 kg), salt powder, mayonnaise and oil and knead well until a hard dough comes out, good to shape. Cover the bowl with cling film and leave in a warm place for about 30 minutes until it doubles in volume. Spread a thin sheet and cut it into triangles or rectangles. Place a piece of shit on each triangle and roll. Wallpaper a baking tray with waxed paper and place the croissants. Bake over medium heat until nicely browned on top. I powdered them warm with powdered sugar.

They are very, very tender.
