  • 2 ounces oyster mushroom caps, coarsely chopped

  • 1 portobello mushroom, quartered and thinly sliced
  • 30g plain flour
  • 600ml whipping cream
  • 1 pinch cayenne pepper
  • 1 pinch salt and ground black pepper to taste
  • 1 bunch fresh chives, chopped

  1. Pour vegetable stock into a large pot; simmer over medium heat.
  2. Melt half of the butter in a large saucepan over low heat; increase heat to medium. Add carrot; cook and stir until starting to soften, 3 to 5 minutes. Add onion, leek, celery and garlic; cook and stir until onion has softened, about 5 minutes. Add squash and courgette; cook for 2 minutes.
  3. Add vegetable mixture into the vegetable stock; continue to simmer the soup over low heat.
  4. Melt remaining butter in the saucepan. Cook and stir chanterelle mushrooms, oyster mushrooms, button mushrooms and portobello mushroom in the hot butter until starting to soften, about 5 minutes. Sprinkle flour over mushroom mixture; stir until a paste forms, 2 to 3 minutes.
  5. Stir mushroom and flour mixture into the vegetable soup. Pour in cream; simmer until heated through, about 8 minutes. Season with cayenne, salt and pepper. Garnish soup with chives.

All you need to create the Cream of Mushroom Meatloaf Recipe is:

1 pound of Lean Ground Beef*

1/2 Cup of Plain Breadcrumbs

1 Can of Cream of Mushroom Soup

* FYI if it is a little over a pound of meat that is fine, however I would not go less than a pound. I have used both Lean and Ground Round for this recipe, and after some reader input it looks like a leaner ground beef with less fat works better versus a 80/20 ground beef.

Preheat the oven to 350 degrees. Combine the egg, breadcrumbs, ground beef, and half a can of Cream of Mushroom Soup. I first used a spoon, and then I put my fingers in to make sure it was mixed up really well. I then formed this into a loaf and placed it into my loaf pan.

I poured the other half of the Cream of Mushroom Soup on top of this and smoothed it out over the top. I cooked this in the oven for 1 hour. (You may need to cook it for as long as 1 hour and15 minutes.) As always, follow the USDA Guidelines for Cooked Meat.

  • 450ml of chicken/vegetable stock or water
  • 50ml of heavy cream/milk
  • salt, pepper, parsley to taste

Preparation

Rinse the mushrooms. Slice them into thin pieces.

(Optional) Separate a handful of mushrooms to be used as toppings later.

Chop garlic and onion into fine pieces.

Step 1

Heat frying pan on medium and add butter. Once the butter has melted, add garlic and onion. Sauté for a few minutes till fragrant.

Step 2

Add the mushrooms into the pan. Cook till softened and add your choice of herbs (thyme, tarragon). Season with salt and pepper.

Step 3

Cook on low heat till all the moisture from the mushrooms has evaporated.

Step 4

Add flour and quickly mix evenly to prevent lumps.

Step 5

Add chicken stock. Once it starts boiling, turn off the heat.

Step 6

Transfer the mixture into a blender and blend till smooth.

Step 7

Pour the mixture back into the pot. Add heavy cream and stir till evenly mixed. Season with salt and pepper to taste.

Optional: Top with a few slices of mushrooms, drizzle a teaspoon of heavy cream over and sprinkle some parsley before serving.

  • 250g box of cannelloni tubes

  • Prepare two medium casserole dishes by brushing a layer of olive oil across the sides and on the bottom.
  • Spread a generous layer (approx. two thirds of one jar) of pasta sauce across the bottom of both dishes.
  • Stuff the cannelloni tubes. Using a freezer bag, scoop a few large spoons of the mixture inside, cut a small hole (smaller than the width of the cannelloni tubes) in the corner of the bag and squeeze in the filling. Once each tube has been filled, lay them flat in the dishes.
  • Add 2 tbsp of water to the remaining soup and mix together. Pour this gently over the cannelloni and then cover with the remaining pasta sauce.
  • Cover both dishes with tin foil and bake for 30 minutes.
  • Remove the dishes from the oven, take off the foil and sprinkle the mozzarella over the top. Place the dishes back in the oven, uncovered, and bake for a further 15-20 minutes or until the cheese is melted. Serve immediately.
