Biscuits with meringue and lemon

I was conquered by these cookies. The sour taste of the fragrant biscuits with coconut and lemon fits perfectly with the sweet and crunchy meringue that melts in your mouth. I took the recipe from Laura Adamache's blog. I'll make them for Christmas too. They are wonderful!

  • 250 g flour
  • 2 tablespoons coconut
  • 1 egg yolk
  • 150 g butter
  • grated peel of 1 lemon
  • 2 tablespoons lemon juice
  • Meringue:
  • 2 egg whites
  • 100 g sugar
  • 1 pinch of salt

RECIPE PREPARATION Biscuits with meringue and lemon:

In a bowl, mix the flour with the 2 tablespoons of coconut. Add the egg yolk, cold butter cut into small pieces, peel and lemon juice. Knead until you get a homogeneous dough. Wrap the dough in foil and leave it in the fridge for 20 minutes. Ten minutes before making the biscuits, we start to make the meringue. Put the egg whites in a bowl, add the salt powder and mix until it no longer falls off the mixer blades. Add the sugar and mix until you get a glossy meringue. Take the dough out of the fridge and place it on the work table, which I powdered with flour. We knead it a little and then we spread it with the twister. We cut the biscuits with a rectangular shape. I cut them with a knife because I didn't have a rectangular shape. We place the biscuits in a tray that we lined with baking paper. We put the meringue in a pos and start to decorate them. Bake the biscuits in the preheated oven at 140 degrees C for 20-25 minutes. I baked them in the second step, during baking I used step 1 and a half, and towards the end I kept the stove door ajar. You should always check the biscuits so that they do not burn and so that the meringue is made. They are delicious!
