  1. Preheat oven to 220 C / Gas 7.
  2. Toss sweet potatoes, olive oil, rosemary, salt and pepper together in a large bowl until evenly coated. Arrange sweet potatoes on a baking tray.
  3. Bake in the preheated oven until tender, 20 to 30 minutes.

Note:

If you substitute dried rosemary for fresh, decrease the amount to about 1 teaspoon, or to taste.

Bakes up crispier baking at 275 for 20 minutes and then at 425 for the remainder(maybe another 20 min). To get it actually really crispy outside fry though for about 4-5 minutes. Good with brown sugar, cinnamon, nutmeg and sugar too.-20 Oct 2013

Grilled Rosemary Sweet Potato Fries

Grilling isn’t just for chicken or steak, my friends. Whether it’s asparagus, corn, bell peppers or sweet potatoes, I love using my handy grill to add smokiness and flavor to all sorts of seasonal vegetables.

Most recently, I decided to create one of my favorite side dishes on the grill: sweet potato fries! My husband loves them, my boys love them, we all love them.

For added flavor, I love tossing in minced fresh rosemary that we happen to have growing outside. If you don’t have fresh rosemary, dried works well too!

If you don’t have rosemary, oregano works well too. Feel free to use any of your favorite herbs and spices here.

Next, drizzle with olive oil, salt, cayenne and garlic powder then toss well to coat. Want to make it a little spicy? Add in more cayenne. Want to keep it mild? Skip the cayenne and replace with black pepper.

Now it’s time to make the foil packets! Simply place the potatoes in the middle of the foil then fold the foil to create little packets to toss on the grill.


Rosemary Cayenne Sweet Potato Fries

The egg white helps keep the fries from getting “floppy,” although they won’t be as crisp as a FRIED sweet potato fries.

Ingredients

  • 3 whole Sweet Potatoes, Small (or 2 Medium)
  • 1 whole Egg White
  • 1 teaspoon Kosher Salt
  • ¼ teaspoons Freshly Ground Black Pepper
  • 2 teaspoons Dried Rosemary
  • ¼ teaspoons Cayenne Pepper

Preparation

Preheat oven to 425F. Line a baking sheet with parchment paper. Spray the paper with cooking spray (I use olive oil spray.)

Cut the sweet potatoes into large matchsticks.

In a medium sized bowl, whisk the egg white until foamy. Stir in the salt, pepper, rosemary and cayenne. Add the sweet potato strips and toss.

Arrange in a single layer on the prepared baking sheet and bake 25 minutes. Enjoy.

This was originally posted on election day four years ago, but I’m updating and bringing it forward because I have the same message for you today and these oven-baked sweet potato fries with rosemary and garlic are just as appealing to me now as they were back then. These delicious baked sweet potato fries have so much flavor, you’ll never miss that they aren’t deep-fried.

First of all, if you’re reading this post and you haven’t voted yet, I’d prefer that you bookmark this recipe, go find your local polling place, then come back and read this later. Really. Go vote!

I’ve made several versions of these over the years but this batch is by far the best. As usual, it’s the simplest combination of ingredients that makes me the happiest. If you’ve never eaten oven-baked sweet potato fries, you need to know that they won’t be as crispy as the deep-fried restaurant version. But I think the flavor of these can’t be beat and I don’t even miss the crunch.

For those of us who aren’t huge fans of sweet potato dishes that are overly sweet, this is the perfect way to reap the nutritional benefits of sweet potatoes and still enjoy a savory snack.

And what kind of food blogger would I be if I didn’t include a quick recipe for a Buttermilk Blue Cheese Dipping Sauce? You’ll find it at the very end of this post. You’re welcome.

Combine finely chopped rosemary leaves, kosher salt, and one garlic clove then pound and grind them together to form a paste.

In a small bowl, mix the rosemary garlic paste with the olive oil.

Cut the sweet potatoes lengthwise into 1/2 inch slices.

Stacking two slices together, cut potatoes into 1/2 inch strips.

Put the cut sweet potatoes into a large bowl and add the rosemary garlic oil mixture.

Now toss the potatoes until they are evenly coated with the oil mixture.

Spread the potatoes out on a parchment-lined baking sheet.

Roast the sweet potato fries in a 425 degree oven for 30-35 minutes, or until golden brown. Check them every ten minutes, and stir or turn them if they appear to be getting dark on the bottom. Watch carefully towards the end because they can burn quickly!

Although these fries are great on their own, who doesn’t enjoy a special dipping sauce every now and again? Ranch would work well, but I really enjoyed the buttermilk blue cheese dressing that’s served with sweet potato fries at one of my favorite local restaurants, Urban Solace. 2 ounces dry blue cheese, crumbled

freshly ground black pepper to taste

1/2 teaspoon chopped fresh rosemary leaves

1 small clove of garlic, peeled

Mix all ingredients together with a fork, mashing the blue cheese a bit as you go. Dressing can be thinned with more buttermilk or regular milk if desired. Cover and refrigerate until ready to use.

1. Preheat oven to 425 degrees.

2. Using a mortar and pestle, mash together the garlic, salt, and rosemary to form a paste. If you don't have a mortar and pestle, put ingredients into a small bowl and mash the garlic, rosemary and salt against the side of the bowl with a fork. It takes a bit more effort, but you'll be able to work it into a paste.

3. In a small bowl, combine the olive oil and garlic paste set aside.

4. Scrub sweet potatoes and cut off any blemishes that you wouldn't want to eat. Slice the sweet potatoes lengthwise into 1/2 inch pieces. Stacking two pieces together, cut potatoes into 1/2 inch strips. Do the same with remaining potato.

5. Put potato strips into a large bowl Add oil mixture and toss well until all potatoes are well coated.

6. Spread potatoes out on a baking sheet lined with parchment paper (the parchment is optional, but makes for easier clean up!). If you don't use parchment, make sure to grease the baking sheet with non-stick cooking spray or some extra olive oil.

7. Roast potatoes for 30-35 minutes, checking every ten minutes and rotating the pan for even browning. Every once in a while check to see if the potatoes are browning too much on the bottom. If that's the case, turn them over. I didn't have that problem, but you never know! Keep a careful watch towards the end and remove as soon as the smallest pieces just barely start to blacken on the ends.

Two medium sweet potatoes will serve 2-3 people as an appetizer. I think you could toss in one more potato without needing any more garlic paste or oil. But if you are cooking for a crowd, double all the ingredients and plan on using two baking sheets. Remember to keep the potatoes in one layer and don't crowd them too much or they won't brown evenly. These fries are best served right out of the oven!

I LOVE fries, all kinds of fries. I love that there is so much you can do with a french fry. You can get them well done, sprinkled with salt, pepper and sugar, dipped in garlic mayo, or animal style (if you have an In ‘n Out near you). I love sweet potatoes and the fact that you have the option of the sweet and savory with these fries.

This recipe doesn’t have to be a fry. They are oven baked so you could chose to cut them into cubes versus a stick (which happens all the time in my house) but there are times when you are having burgers and a fry just sounds right.

These are great because you get the sweet potato and rosemary flavor combo that is killer. It reminds me of a fry version of my Mom’s Liz’s Candied Carrots I posted before Easter. Soooo good. Give them a shot, you’ll be making them all summer!


  • Peel potatoes, cut into 1/2 in slices & then cut into strips
  • Soak in Cold Water for about 45 min to 1 hr. *optional – it makes them crispier! Just make sure to dry them before cooking.
  • Preheat oven to 425*
  • toss with EVOO or fat of choice, garlic, rosemary & sea salt
  • Bake for about 20-25 min or until browning & crispy
  • I like to add a little more sea salt when they come out of the oven.
  • Serve immediately

Notes:

Personally, I like to add the seasonings when I take them out of the oven or during the last 5 min. so that they don’t get so dried out. Experiment & see which way you like it best.

Drain your sweet potato and pat dry using a clean kitchen towel. In a bowl toss your fries in the cornflour, then add the paprika, garlic, oil and pepper.

Toss your sweet potato fries in your oil mix, and then lay out on a tray, top with your rosemary and bake for 15 minutes, then turn over and bake for another 10 minutes. Salt to taste and serve!
