  • 3 tablespoons honey
  • 1 1/2 teaspoons salt
  • 275g bread flour
  • 180g wholemeal flour
  • 1 tablespoon vital wheat gluten
  • 60g granola
  • 1 (7g) sachet dried active baking yeast

  1. Place ingredients in bread machine pan in the order suggested by the manufacturer. Select wholemeal or dough cycle and press Start.
  2. To bake bread in oven: select dough or manual cycle. Once cycle is complete, shape dough and place in a greased loaf tin. Allow to rise in a warm spot until doubled in size. Bake in a preheated 180 C / Gas 4 oven for 35 to 45 minutes or until a thermometer inserted in the centre of the loaf reads 95 degrees C.

My test of a good homemade bread is how good it is two days later -- untoasted, with just a little butter. This held up pretty well. I'd even give it a 4 1/2 if I could. It was good fresh with butter and honey (although I would have liked a crunchier crust at this point), good the next day as toast and for sandwich bread. A very all-purpose whole wheat recipe. I might try increasing the amount of granola some next time. It more or less disappeared into the texture of the bread. (I baked it until a turkey thermometer registered 200 degrees, which was just right.)-13 Sep 2008

  • 3 tablespoons unsalted butter, melted, plus more for bowl and pan

In a small bowl, stir honey into warm water, then sprinkle with yeast. Let stand until foamy, about 5 minutes.

Stir together flour and salt in a medium bowl, then stir in yeast mixture and melted butter just until a dough forms. Knead on a lightly floured surface until smooth, 5 to 10 minutes. Transfer to a large buttered bowl, cover with plastic wrap, and let rise in a warm spot until doubled in bulk, about 45 minutes.

Preheat oven to 375 degrees. Punch down dough. Shape into an 8-inch square, about 1 inch thick. Fold in two opposite sides of dough to meet in middle, slightly overlapping. Press seam to seal. Place dough, seam-side down, in a buttered 9-by-5-inch loaf pan. Sprinkle with flour. Cover with plastic wrap and let rise in warm spot until dough is about 3/4 inch above top of pan, 30 to 45 minutes.

Transfer pan to oven and immediately reduce heat to 350 degrees. Bake, rotating pan halfway through, until top is golden brown and bottom sounds hollow when tapped, 35 to 40 minutes. Let cool in pan on wire rack 20 minutes, then turn out bread onto rack and let cool completely. Bread can be stored, tightly wrapped, at room temperature up to 3 days or frozen up to 3 months.


Yoghurt Honey Wholemeal or White Bread

Tried a recipe with Yoghurt and honey from Princess Linda, made into this Wholemeal loaf almost 1kg dough. Super tall and fluffy and good to eat on its own.

Below pictures are half recipes done in the 450g tin.

Happy to find this staple recipe as I make the whole family’s bread, and this won’t last a week. You can also make it plain if you like and it will be equally tasty.

Recipe (for 900g pullman tin or half for 450g tin)

  • 420g bread flour
  • 80g wholemeal flour (replace all with bread flour if making white bread)
  • 50g sugar
  • 1 egg
  • 90g sugar free yoghurt
  • 20g honey
  • 100g milk
  • 100g water

Method

1. Mix A roughly with a spoon, set aside covered for 30 min to autolyse.

2. Add the yeast and knead till a rough dough forms. Then add C and knead till window pane.

3. Form a smooth round dough and proof covered for 1-1.5 hrs, till double in size.

4. After proofing, flatten and pat away large bubbles. Divide dough into 5 round doughs, about 195g. Rest them for 20 min.

5. After resting, roll out and fold 1/3 In from both sides, then rest for 10 min again.

6. Roll out lengthwise with a rolling pin, pat away bubbles at the edges.

8. Place in tin and proof for 60-70 min, till up to 90% of tin height.

9. Bake in this Pullman tin for 40 – 50 min at 185 deg C. Tent at 10-15 min with aluminium foil. Adjust your temperature and duration if not using this tin.

10. Turn out immediately to cool on wire rack. Wait for at least 1 hour or even overnight, before slicing.

Special notes about ingredients in this bread recipe:

  • You’ll use white whole wheat flour. I haven’t tested it with regular whole wheat flour, but if you do, please know that it may be a tiny bit more dense.
  • You also have the option of using regular milk or almond milk I always use an unsweetened vanilla almond milk because it’s what I usually have in my fridge.
  • Lastly, you can use either olive/coconut oil or butter. You’ll get great results either way.


Measure the flour into a large mixing bowl then all you do is simply sprinkle on the salt and easy bake yeast, with a spatula mix everything together thoroughly.

Make a well in the centre and pour in all the hand-hot water. Then mix the water into the flour gradually to form a dough: the exact amount of water you'll need will depend on the flour. Finish off by mixing with your hands until you have a smooth dough that leaves the bowl clean – there should be no bits of flour or dough remaining on the sides of the bowl and, unlike pastry, it is better to have too much water than too little.

Now transfer the dough to a lightly floured flat surface and knead it briefly then divide the dough into quarters and then the quarters into eighths. (If you want your rolls to be absolutely the same size, you can weigh the dough then weigh out 8 portions.) Take one portion of the dough, knead it briefly, bring the edges into the centre and turn it over and shape it into a round then do the same with the rest of the portions of dough (or if you prefer a more rustic look just bake the rolls in the rough shapes you have just cut).

Place the rolls on the baking sheet then pop the baking sheet inside the greased polythene bag and tuck the open end underneath the tray. Leave the rolls to rise until they have doubled in size, about 1-1½ hours at room temperature (but this could be much quicker depending on the warmth or the room).

Pre-heat the oven to 200°C, gas mark 6.

When the rolls have risen, remove the bag and sprinkle them with flour, and bake them on a high shelf of the oven for 20-25 minutes, then cool them on a wire cooling rack.

  • 3 to 3 1/4 cups whole wheat flour
  • 1 1/4 cups warm water (105 - 110°F)
  • 3 tbsp oil (I prefer avocado oil)
  • 3 tbsp honey
  • 1 1/4 tsp salt
  • 2 1/4 tsp active dry yeast or bread machine yeast (1 packet)

Instructions

Combine the Ingredients

Add the ingredients to your bread machine in the order instructed by your bread machine manual -- this is very important. My particular bread machine instructs you to add the wet ingredients first, then to layer the dry ingredients (except yeast), then make a well in the dry ingredients to put the yeast in. However, some bread machines instruct you to layer the dry ingredients first and some machines even have a separate compartment for the yeast. So, follow the layering instructions of your bread machine.

To Make the Bread Entirely in the Bread Machine

Select the "whole wheat" option on your bread machine (and then hit "start" if necessary). See Recipe Notes.

Walk away and enjoy your day! My bread machine takes 3 hours and 40 minutes to make a loaf of whole wheat bread, but this will vary per bread machine.

Let cool before slicing and enjoy your homemade bread!

To Make the Dough in the Bread Machine and Bake in the Oven

Select the "dough" cycle (and hit "start" if necessary). See Recipe Notes.

While dough cycle is running, grease a 9" x 5" loaf pan.

Just before the bread machine begins the final rise cycle (you can find out exactly when this is in your bread machine manual), remove the dough from the bread machine.

Gently knead by hand on a lightly floured surface or pastry mat, and shape into a loaf.

Place into greased loaf pan.

Cover with a kitchen towel and allow to rise for about 60 minutes.

Bake for 30 minutes (rotating the pan halfway through if necessary).

Remove from the pan immediately and allow to cool completely on a cooling rack before slicing.

Recipe Notes

When adding the flour, start with adding 3 cups (see next instruction regarding possibly needing the last 1/4 cup).

During the initial stirring/kneading, be sure to monitor the dough for a few minutes, adding more flour (1 TBSP at a time) if the dough is too wet or more water (1 TBSP at a time) if it is too dry. The dough should be tacky, but not fully sticking to the sides. Whole wheat dough should be tacky/a bit stickier than white dough or else it will be dry.


Sprinkle yeast over the lukewarm water. Let stand 8 to 10 minutes. Then stir to dissolve. Place 3 cups of flour, salt and honey in processor bowl. Process 5 or 6 seconds. Add dissolved yeast through feed tube while machine is running. Process about 10 seconds.

Combine milk, oil and eggs in a measuring cup. Add through feed tube while machine is running. Batter will be very sticky. Dump in the reserved 1/4 cup flour as machine begins to slow down. Process until well mixed, about 30 seconds. Batter will not form a ball on the blades. Empty onto a well-floured board or counter. Flour surface of dough to make it manageable for kneading. Knead about 2 minutes, adding flour as necessary to prevent dough from sticking. Place in a greased bowl and turn dough over so that all surfaces are greased. Cover and let rise until double in bulk.

Punch dough down. Roll dough on a lightly floured board into a 9x12 inch rectangle. Roll up, jelly-roll style, from the shorter side. Seal ends by pressing down the ban. Cover and let rise until double.

Bake at 375 degrees F for 35 to 40 minutes. Remove from pan and let cool.


TIPS on MAKING the BEST HOMEMADE ONE HOUR WHOLE WHEAT BREAD:

  1. Let your YEAST PROOF . The key is to use very warm water (about 110 degrees). Adding honey to the yeast helps it proof even faster. Let the yeast proof for at least 5 minutes. Remember to always use fresh yeast. You will know the yeast is working when it starts to form a creamy foam on the surface.
  2. Use WHOLE WHEAT FLOUR or half white bread flour and half whole wheat flour. If you have a wheat grinder, you can grind your own wheat. If not, look for organic whole wheat flour. You can always use half white flour and half whole wheat flour if you like a lighter bread.
  3. Use a STAND MIXER . This bread recipe is easiest with a stand mixer such as a Bosch. I love my Bosch mixer because it makes this bread so much easier! This is a huge time saver as you knead the bread for 10-12 minutes in the mixer. It saves you from doing it yourself! If you don’t own a stand mixer, you can knead the bread dough by hand.   4. Let RISE in WARM OVEN. This expedites the rising process and cuts the time in half. Set the oven to about 200 degrees and let the bread rise for approximately 20 minutes or until double in size. Here are my favorite loaf pans.
  5. BAKE until GOLDEN BROWN . Heat the oven to 350 degrees and bake until golden on the outside. Remove from oven and spread butter over top of loaves to give moisture and shine.

Once you remove the hot homemade whole wheat bread from the oven, remove from pans and spread with butter and jam.


Honey Wholemeal Bread Recipe (For the Breadmaker)

I’m a typical British girl, I love nothing more than some sarcasm, a brew and a slice of toast. I’ve got IBS so brown bread is much better for my tummy than white bread (even though I do love it) and I’m here to tell you that this wholemeal bread recipe even gives good old white toast a run for its money in deliciousness! If that wasn’t enough, because you can make it in the breadmaker, it’s barely any effort either!



What you need:
545g wholemeal flour
10g instant yeast
2 tbsp olive oil
100g honey (I always find it easier to weigh it in a glass but it’s about 50ml if you want to measure it out – the choice is yours)

350ml of warm water (WARM not hot or it will mess with the yeast and the bread won’t rise)

Here’s the super complex recipe:

  1. Add the ingredients in the order above into the breadmaker pan.
  2. Set your breadmaker to a 2lb brown loaf program.
  3. Press start.
  4. Once it’s done take it out of the breadmaker right away and cool it on a wire tray – watch your fingers.

Turn the dough out onto a lightly floured work surface, and punch down. Divide dough into two equal pieces. Flatten one piece of dough into an oval, and roll up lengthwise. Place the roll, seam-side down, into a prepared pan. Repeat process with second piece. Cover with oiled plastic wrap. Place the loaves in a warm place, and let rise again until doubled in size, 30 to 45 minutes.

Bake until deep golden brown, 50 to 60 minutes (the loaves will sound hollow when tapped on the bottom). Transfer pans to a rack, and let cool 5 minutes. Invert the loaves onto the rack to cool completely.
