Ingredients Lies

3 eggs
600 gr. White flour
200 gr. fat yogurt (Greek)
3 tablespoons sugar
grated lemon peel
1 pinch of salt
1 teaspoon baking soda
frying oil
powdered sugar for serving.

How to prepare Lies

Break the eggs separately (to check their freshness) and mix them with the sugar. Beat them well with a fork (or mixer) until they froth and the sugar has melted.
Add the yogurt, lemon peel and baking soda. Homogenize and start adding flour, in several stages (between stages, we add salt powder).
Knead a homogeneous dough, soft but non-sticky. If necessary, increase or decrease the amount of flour.
Let the dough rise (for 30 minutes), cover with a clean towel and in a warm place, away from drafts.
Divide the dough in half.
On the table sprinkled with flour, spread the dough in a rectangular shape 1 cm thick.
With the help of the pizza knife, we cut the dough into rectangles, and in the middle of each rectangle we make a cut through which we will pass one of the ends of the & # 8222liar & # 8221, giving it the shape of a & # 8222melt & # 8221.
Fry the lies in an oil bath on both sides. If necessary, you can add oil or change it (if it burns too hard). We take them out on absorbent paper.
We serve them plain or powdered with sugar, along with a cup of tea or a cup of warm milk.

We offer you a traditional Ukrainian recipe for fluffy and delicious lies, which is prepared with yogurt and baking soda.

You will get appetizing and sweet lies, very soft on the inside and crunchy on the outside, with a fluffy and airy texture. Thanks to a secret ingredient, you will prepare the tastiest lies ever enjoyed. Try it and you will not regret it!

- 1 teaspoon grated baking soda, quenched with vinegar (or baking powder)

- 2 tablespoons oil (for dough + oil for frying)

Method of preparation

1. Sift the flour, put it in a bowl, distribute it at the edges and make a hole in the middle.

2. Pour into the hole: yogurt, baking soda, oil, salt and sugar. Stir a little, then add the vodka and egg.

3. Knead the dough on the table and add a little more flour, if necessary. The dough should be elastic and fluffy at the same time.

4. Spread the dough in a layer no more than 1 cm thick.

5. Cut the dough into strips, then cut all the rhombus strips.

6. Make a cut in the middle of each diamond, then twist the lies into a bow, wrapping one end around this cut.

7. Here are the lies you will get.

8. Fry the lies just like the donuts in a large amount of hot oil.

9. Place the lies on a paper towel to remove excess oil and sprinkle with powdered sugar.


A sheet with a thickness of approx. 3-4 mm and cut diamonds (with a side of 5 cm) with a knife, with the pizza / serrated cutter, or with a special super cutter (family heritage :).

In the middle of each rhombus, a slit is cut (lengthwise) through which a corner is drawn, like a bow.


  • 400 gr wheat flour, 6 egg yolks
  • 6 tablespoons sour cream 18% fat, 2 tablespoons baking powder
  • 2 tablespoons vodka, a pinch of salt
  • Powdered sugar (for decoration) and oil (for frying)

In a bowl we will put wheat flour, egg yolks, sour cream, baking powder, vodka and salt and mix very well with a mixer with kneading hooks, until we get an elastic dough that does not stick to hands.

Transfer the dough to the top sprinkled with flour and spread it in a rectangular sheet 1 cm thick, using a rolling pin. We cut the dough vertically, in several thin strips, which we then cut in half.

In the middle of each strip of dough we will make a cut and we will pass one of the ends through it. We repeat the procedure until we model all the lies.

We put a pan with oil on the fire. We can put a piece of dough in the oil to see when it gets hot. When the oil heats up, put the lies in the pan and fry them for a few minutes on each side until golden brown.

When they are ready, take them out on a paper towel to absorb the excess oil. At the end we pass them through powdered sugar and put them on a plate. They are delicious! I wish you good appetite with your loved ones!

Transylvanian lies

They can be very well served with a tea or a cup of warm milk and can be a delicious breakfast that will remind us of childhood and grandma's kitchen.

Ingredient:

  • 1 kg of flour
  • 2 tablespoons lard or very greasy butter
  • 2 eggs
  • 1 teaspoon baking soda
  • the juice of half a lemon
  • 2 tablespoons sugar
  • a pinch of salt
  • a yogurt
  • a glass of cream.

Separate the egg whites from the yolk and beat the egg whites until they become foam. Knead the flour very well with the lard, then add the egg white foam, the yolks, the baking soda, a little salt and the lemon juice for tenderness. For flavor we can grate lemon peel.

Mix all the ingredients and add in equal amounts yogurt and cream, until you get a thick dough that can be spread with a fork. Spread the dough in the form of a blanket, and then cut into small rectangles. Each rectangle will be cut in half. We will insert the tip of each rectangle through the hole in the middle, weaving and thus obtaining the lies.

They can also be filled with jam, marmalade or plum jam. In this case, we will place the jam in the middle of the rectangles and press by gluing the edges to obtain some cushions.

After we have finished making them, we will fry them in an oil bath on both sides, until they brown. When they are fried, place them on a tray and sprinkle powdered sugar over them.

Fluffy lies & # 8211 Delicious donuts. Quick recipe, with only 6 ingredients

Instantly disappear from the table - The gogonate, fluffy and tasty lies - To prepare the lies according to this recipe, you need the following ingredients:

Necessary ingredients:

  • 500 ml chefir
  • 200 g sugar
  • 4 eggs
  • flour
  • 2 packets of baking powder
  • powdered sugar

Method of preparation:

1. In a bowl, add all the ingredients and mix well.

In the end we have to get a soft and homogeneous dough.

2. Spread the dough into a thin sheet.

Using a knife, cut rectangles out of the dough, then make a cut in the middle of each piece.

3. Fry the lies in a pan with oil, over low heat, until nicely browned.


Dry or candy? How about… lies?

Corkscrews, lies, ears, candies, droughts - whatever you call them, these donuts with such cute names made the childhood of many of us much more beautiful.

In our country, my grandmother used to make them almost every Sunday, and then, when I grew up and came to visit her or on vacation, she would immediately get to work, knead the dough and make some brushwood as only she knew how to do. I only heard the name "dry" in the area where I grew up, the "lies" I think would fit best, because few would imagine that a dough without yeast can grow so beautiful when baked - Practically, just like donuts. The name "lies" is, in fact, the best known - if you tell someone "how I miss some dryness as my grandmother used to do", immediately follows the statement "meaning lies" - simply because it is the best known. For me it is somewhat confusing, from the recipes read on the internet the lies are, in fact, still leavened donuts, only they have a different shape. That is, this bizarre shape - hence another name, "ears", because they look like ears. I would say elves!

In the same county where I grew up, Mureș, only a few kilometers from my grandmother's village, the same donuts are called ashberry. I didn't understand why and I couldn't find anyone to explain it to me - probably because of the resemblance to the fruit of the same name. They are called Banat cirighele and they were made at the Banat prayers, by Farsang - they were prepared by Hungarians, Swabians, Slovaks and Romanians alike.

Looking more for the origin of these simple donuts - but so beloved! - I discovered an article in which the author lamented the fact that “few refer to the original Greek recipe, from the Peloponnese, Crete or Mykonos - places from which, apparently, they left at the beginning of the 17th century to the south of Russia. In Greece we find them under the names of Diples, Thiples, respectively Xerotigana kritis. The difference between Slavic and Greek recipes is that these thin strips of dough, fried in oil and crispy enough, do not powder at the end, but are introduced hot in honey and covered with ground walnuts. And in the case of these donuts, in fact, a rule of gastronomy is observed: a recipe arrives in political or cultural ways in a region other than the origin, and the local cuisine replaces ingredients with some handy, cheaper or easier to procure during preparation. : sugar instead of honey, for example. In Russia, Ukraine and Uzbekistan, the same lies are known as kvorost, verguny, and chak-chak, respectively. Poles and Ukrainians have mastered the same dish as a national recipe, for moments of religious or festive holidays, such as weddings: ‘Chrusciki’. In fact, the Poles also made them known to the Americans, and in Italy the cherries came under the names of Chiacchiere, Frappe, Cerici and are a favorite dessert next to coffee with milk.

As you can see, the cherries are very well known, and their recipe has been adapted according to the area - some recipes contain baking powder, others a lot of sugar, in some no eggs are put at all… I have been making the recipe I know for years childhood, a recipe that I gladly share with you.

Let's see how they are done:

For starters I write that the weight is approximate, in the past no one weighed the ingredients, everything was done by eye and the units of measurement were the cup and the spoon. And since some dishes were made so often, housewives already knew what the consistency of the dough should be. I will try to explain the recipe in as much detail as possible so that you can succeed in some honest lies!

  • 500g flour
  • 2 eggs
  • 2 tablespoons greasy cream
  • about 200ml of milk
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • rum essence
  • a pinch of salt
  • oil
  • powdered sugar

Sift the flour on the board on which we knead the dough. I hope you do not miss the flour sieve in the house, because it has a very important role in doughs not only to separate the flour from other impurities, but also to obtain an airy and fluffy dough.

Rub the eggs well with the sugar and add the rum essence and cream. The fatter the better, if you are from Transylvania I know you don't miss it from the fridge :)

Make a hole in the flour, add the mixture of eggs and cream and baking soda in the milk. We add a little salt and quickly knead an elastic dough that comes off the fingers when it has a good consistency. If necessary, add more flour or skim milk.

Sprinkle flour on the board and spread a sheet of dough, not very thick because the lies will increase a lot when fried. Cut with a knife into the dough square or rectangular shapes. You choose the dimensions, I usually make them bigger - that means a side of 5-6 cm. Make a small cut in the middle of each square and pass a corner of the square through it, gently pull it out on the other side and pull it slightly giving it an elongated shape. Ready the first lie or lie in my case, do the same with the rest of the dough. Try to cut it in such a way as to use it all from the first, the dough does not spread a second time.

The lies are fried in an oil bath - so you need a larger diameter pan, which must be deep. A wok or a fryer, preferably.

Heat the oil and fry them on both sides until nicely browned. Then we take out the lies on a plate on which we put absorbent paper to reduce the excess oil.

We roll them well with powdered sugar (this is our children's favorite part) and serve them almost cold.

If they stay and no one gets upset the next day, they are just as fluffy! In fact, here's the lie test - it has to be the same the next day, if they're like biscuits you don't think about where you went wrong, you have to do a few more vailings of lies to "catch" the perfect recipe.
