There Carrot Cake is an American cake, also typical of the English tradition, a very different cake from our carrot cake both for the dough which is decidedly more enjoyable, and because the cake is glazed with a cream cheese. The dough is very moist and has a brown color, obtained from the use of grated carrots, chopped walnuts and the addition of cinnamon which give the cake a truly distinctive aroma and flavor. The filling and the glazing obtained with a frosting of cheese, butter and icing sugar also contrast.
Maybe it is because it is one of my favorite cakes, it may be that I have made it several times, adjusting the shot gradually, but I can say, without false modesty, that mine Carrot Cake it is one of the best ever tasted;) Don't believe me? ask the guys in my office who tasted the carrot cake and rolled their eyes, confirming what I just told you;)

Method

How to make carrot cake

Peel the carrots and grate them finely. Blanch the walnuts for a couple of minutes to eliminate the bitter taste, then chop them coarsely.

In a large bowl, whisk the eggs with the sugar and vanilla for about ten minutes, until frothy.

Sprinkle in the flour, cinnamon, baking powder and baking soda and whisk together until the mixture is smooth.

Now add the carrots and walnuts to the mixture. Mix the dough with a wooden spoon.

Pour the mixture into a greased and floured springform pan. Bake the carrot cake at 180 ° and bake for 50 minutes.

Once cooked, take it out of the mold and let it cool.

In the meantime, prepare the cheese glaze by working with a whisk, the Philadelphia, the softened butter, the icing sugar and the vanilla essence.

Once the cake has cooled, cut it horizontally to obtain 2 discs. Spread a third of the glaze obtained on a cake disc and cover with the other.


Glaze the surface of the carrot cake and if you prefer, also the edges with the remaining glaze and make small wisps of cream on the surface with the leftover glaze.


Decorate the carrot cake with sugar or marzipan baby carrots and serve.
