  • 1 teaspoon salt

  • 3 tablespoons plain flour
  • 1 1/2 teaspoons steak seasoning
  • 1 teaspoon ground black pepper
  • 240g grated Cheddar cheese

  1. In a large pot over medium heat, combine potatoes, carrot, celery, water and salt. Bring to the boil, then reduce heat, cover and simmer until potatoes are tender, 15 to 20 minutes. Once tender, stir in milk.
  2. In a small bowl, combine melted margarine, flour, steak seasoning and pepper. Stir into soup, increase heat to medium and cook, stirring, until thick and bubbly. Remove from heat and stir in cheese until melted. Let stand 5 to 10 minutes before serving.

Very delicious but the recipe is missing some information. It doesn't say what to do with the milk. So I added the milk just before I added the butter/flour mixture and it came out just fine.-10 Nov 2003

I think this recipe is amazing!!! I make enough to freeze about once a month. I've had my mom over for lunch and she loved it as well. People ask for the recipe all the time! The only real change I made was to use chicken broth instead of water. As well, I always add extra veg and I leave the skins on my potatos.-16 Oct 2007

This potato soup is great and very easy to make. The first time I made it I followed the recipe as stated and the second time the only change I made was that I used Yukon gold potatoes and a little chopped onion and they both turned out great. The only other suggestion I have is to top with chopped green onion and crispy pre-cooked bacon before serving. Great recipe.-21 Jan 2005

  2. Return the hot to medium-high heat and add the onions, carrots, and celery. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, seasoning with salt, pepper, and Cajun spice.
  3. Pour in the broth and bring it to a gentle boil. Cook for 10 minutes, or until the potatoes are starting to get tender. Whisk together the flour and the milk, then pour into the soup and allow the soup to cook for another 5 minutes.
  4. Remove half to 2/3 the soup and blend in batches in a blender/food process until completely smooth. (***USE CAUTION WHEN BLENDING HOT SOUP IF POSSIBLE, ALLOW THE SOUP TO COOL BEFORE BLENDING***) Pour it back into the soup pot and stir to combine. Let it heat back up as you taste for seasonings, adding more of what it needs. Stir in cream, then stir in parsley, reserving a little for garnish.
  5. Serve in bowls garnished with parsley, grated cheese and crisp bacon pieces.

And most of all&hellipit has to make me close my eyes, sigh, and feel like everything till the end of time is going to be okay.

But other than those things, I&rsquom not the least bit picky about potato soup!

The Cast of Characters: Small Russet potatoes, carrots, celery, onions, milk, flour (not pictured, because I&rsquom an airhead), heavy cream, salt, pepper (not pictured, for the same aforementioned reason), Cajun spice (ditto), parsley, and thin bacon. The sour cream is optional, as is the cheese, which is obscured by the potatoes.

Gosh, I&rsquom thorough with these Cast of Characters set-ups, aren&rsquot I?

The best part of this creamy comfort food recipe is that it&rsquos literally a &ldquoset it and forget it&rdquo meal.

Add your ingredients to the slow cooker and when you come back a few hours later, you just stir in the final ingredients and dinner is served!

You can customize this however you like, keeping it vegetarian with vegetable broth or use chicken broth and top it with bacon bits. You decide!

Ingredients

  • 2 ½ pounds russet potatoes, about 5 medium potatoes
  • 4 cups chicken or vegetable broth
  • 1 large white onion, diced
  • 4 tablespoons butter, cut into pieces
  • 2 cups whole milk
  • 4 oz cream cheese
  • 2 cups shredded cheddar cheese
  • 1 bunch green onions, diced
  • Salt & pepper to taste

Instructions

  1. Place the diced potatoes, onions, butter in the bottom of the slow cooker and cover with broth.
  2. Cover and cook on low for 6-8 hours, or high for 3-4 hours.
  3. Once the potatoes have completely softened, use an immersion blender or potato masher to mash the potatoes. If you like a thicker soup, use a potato masher. If you like a creamier soup, use an immersion blender.
  4. Add the milk, cream cheese, and ½ a cup of shredded cheese and continue to blend.
  5. Add salt and pepper to taste.
  6. Garnish with remaining cheddar cheese and green onions.

Notes

Tip:Try using a low sodium broth and adjusting salt to taste. The sodium can add up quickly when using packaged broth and adding your own salt helps you control the flavor.

  • 1 cup beer
  • 3 ounces grated cheddar cheese
  • 3 ounces grated gruyere cheese
  • 1/2 cup reduced fat milk
  1. In large pot, heat butter over medium until bubbly.
  2. Add carrot, onion and ham. Sauté 5-10 minutes.
  3. Add potatoes and chicken stock, stir to combine. Simmer for 20 minutes, covered.
  4. Put about half the soup in a blender and process until smooth. Add back to pot.
  5. Add beer, cheese and milk. Stir to combine. Garnish with shredded cheese of your choice, sour cream, crackers and sprouts if desired.

Notes

Blending only half of the soup smooth gives it a great texture. If you’d like to make this soup vegetarian, simply skip the ham and use vegetable stock instead of chicken – it will still be rich and delicious!


Crock-Pot Potato Soup

Mashing half of your potatoes when the soup is almost done gives you a thicker, creamier texture. More like the one you would get from making potato soup on the stove. If you prefer a thinner soup you can easily skip that step! If you want a vegetarian soup you can easily skip the bacon. Maybe add in a little smoked paprika to add in some extra flavor!

We love using Yukon gold potatoes for potato soup as they are creamy and make for the best texture in the soup. Russets are also great because they mash well and their starch will help further thicken the soup!

Potato Cheddar Guinness Soup

Ingredients

  • 2 Tbsp butter
  • 1 medium onion, chopped (about 1 1/2 cups)
  • 1 celery rib, chopped or sliced (about 1/2 cup)
  • 1 1/2 pounds (680 g) russet potatoes, peeled and thinly sliced
  • 3 cups (750 ml) chicken stock (add 1 1/2 teaspoons of salt if using unsalted stock)
  • 1 cup (250 ml) Guinness extra stout (do not use draught)
  • 1/2 teaspoon fresh or 1/4 teaspoon of dried thyme
  • 6 ounces (170 g) grated extra sharp cheddar cheese
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon paprika
  • Chopped chives for garnish

Method

Melt butter on medium heat in a large, thick-bottomed pot. Add the onions and cook until golden, about 10 minutes. Add the celery and cook 5 minutes more.

Bring to a simmer, lower the heat, partially cover, and simmer until the potatoes are tender and easily fall apart, about 15 to 20 minutes.

When the potatoes are tender, remove the pot from the heat. Pour potato mixture into a bowl and let cool for a few minutes.

Working in batches, ladle the soup into a blender, filling the blender bowl only a third full at a time.

Add a portion of the grated cheddar to the blender bowl as well. (If it takes 3 batches to purée the soup, divide the cheese into 3 portions.)

Holding the lid of the blender down (to keep the hot liquid from erupting out of the blender), pulse until smooth. Return the smooth purée to the soup pot.

Taste for salt and add more if necessary. If the soup is too sour or bitter to your taste, add 1/2 teaspoon of sugar to the soup.
