- 400 g flour
- 2 eggs
- 100 ml of milk
- 100g old
- 50 g butter
- 30 g fresh yeast or 1 sachet of dry yeast
- 1 jar of jam.
Preparation time: less than 120 minutes
RECIPE PREPARATION Pie with pear jam:
Melt the butter with the sugar in a saucepan over low heat. After the butter has melted, remove from the heat and mix well. Mix the eggs well with the yeast in a bowl. Add the eggs over the melted margarine, and then the milk. Add the flour and knead well. The resulting dough is soft, but does not stick to the hands. Leave it to rise for 30 minutes in the microwave oven. Take 3/4 of the dough and spread a sheet on the baking paper. Then take it with baking paper and put it in the tray. Add the jam and gently pass the ends to cover the edge of the pie. From the remaining crust (1/3) spread a sheet and cut thin strips from which the grill is made on top. Grease with egg yolk. Bake in a preheated oven until browned and cooked.

It's time to try something new: Pear jam. It sounds extremely commonplace, but if you add figs and a little whiskey, you will discover a totally unknown but incomparable taste. Try a pear jam recipe with figs and whiskey, to enjoy a delicacy on bread.
1 kg pear
500 g of figs
20 g of ginger
750 grams of sugar
250 ml of whiskey
It is a very easy recipe that does not require any less boiling than the usual jams. It sounds weird but it really works. If we aroused your curiosity, let's get to work.
Wash the pears very well, peel them and cut them into cubes. It is very important that the pears are strong, because they are fruits that soften extremely quickly. Figs must be very ripe.
Wash them well, remove the peel and then cut them into pieces. Put all the fruit and sugar in a pot and then cover the pot with a lid. Leave the fruit and sugar in the covered pot for 5-6 hours. The sugar will make the fruit leave its juice. After this time, mix the fruits and sugar preferably with a blender, to obtain a fine paste, then put the pot on the fire and boil the jam for no more than three minutes. Now it's time to add the whiskey, after which the pot returns to the heat for another minute. Be sure to stir constantly in the jam, so that the whiskey is very well incorporated into the fruit.
A secret is that, after you have made the jam, you put it in jars and it has cooled, put the lids on the jars and do not open them for about two weeks. During this time, the jam will take on a special taste, which you will never get tired of. Here's how a seemingly trivial recipe for pear jam, can become a delicacy. You don't have to spend hours in the kitchen to prepare something spectacular, you just have to have the right recipe. Thus, you will be able to enjoy the special pear jam with figs and whiskey.
step 1. Wash the pears, clean the seeds and cut them into cubes.
step 2. Mix with sugar, leave for 5-10 minutes to give a little juice and boil, preferably in a bowl with a wide, double bottom. When it starts to boil, turn on the heat slowly and add lemon slices.
step 3. Leave on low heat for a few hours, stirring periodically, until well combined. Put a drop on the edge of the plate. If it doesn't leak, it's ready. Pears contain a lot of pectin, so they bind very well.
step 4. When ready, pour into clean, dry jars. It seals. Turn the jar upside down for 5 minutes, then store in the pantry in the normal position. If you don't want to keep it for the winter, put it in whatever bowl you like and enjoy it with pleasure.
We make the yeast mayonnaise, 1 tablespoon of flour and sugar, then we put it in the flour bowl and leave it to rise for 10 minutes, covered by electricity. Add warm water and knead an elastic and non-sticky dough that you leave to rise for 20 minutes. Spread the sheet, put cubes of butter, wrap and knead again. Refrigerate for 20 minutes. We spread the sheet and cut according to the shape of the tray (you can use a lid)
In a tray that we cover with baking paper, sprinkle sugar, place a few cubes of butter and then slices of pear placed in a circle. Put in the preheated oven at 200 degrees until the pears soften.
Remove from the oven, sprinkle with grated Parmesan cheese, cover with the sheet that you prick from place to place. Put it back in the oven at 180 degrees until the sheet is baked.
Pour the pie on a plate then sprinkle a little more Parmesan.

In our house all the jams, including this pear jam (without sugar), are prepared by my mother, aka Grandma Dina. Only she knows how to pick the fruits, to clean them, to cut them and to keep them until they boil slowly, over low heat, very small, in the oven, for hours on end.

We are accustomed to jam recipes in which added sugar it is in an extremely large amount, sometimes in the same proportion as the fruit itself.

1. To make the dough, put 225g of flour, sugar, salt and butter in a bowl. Using your fingertips, rub the ingredients until they look like a thick breadcrumbs. Add the egg, then form a dough with your hands. (If it is too dry, add a little cold water, if it is too wet, add a little more flour). Wrap the dough in foil, then cool in the refrigerator for 30-40 minutes.
2. Meanwhile, heat the oven to 180C and line a baking sheet with a baking sheet. and line a large baking sheet with baking paper. Put the pears in a bowl and mix with brown sugar, cinnamon and 1 tablespoon of flour.
